Tiger Pound Cake 1-pound (4 sticks) Butter, softened at room temperature 2-1/2 cups granulated white Sugar 3 cups All Purpose Flour 1 Teaspoon Baking Powder 1 Teaspoon Baking Soda 1/4 Teaspoon Salt 8 Large Eggs 2 Teaspoons Vanilla Extract 1 cup Sour Cream 1/2 cup Boiling Water 1/2 cup unsweetened Cocoa Powder 2 Tablespoons Grated Orange Zest 1 Teaspoon Almond Extract 1/2 cup Fresh Squeezed Orange Juice (1) Preheat oven to 350 degrees F. Butter a bundt pan, 10" X 3.5" (2) In a stand mixer beat butter until creamy. Add sugar and beat until fluffy. 2 to 3 minutes all together. (3) In a bowl mix flour, baking powder, baking soda and salt. (4) In another bowl mix eggs, vanilla extract and sour cream. (5) With mixer on low alternate adding dry ingredients a third at a time and wet ingredients a third at a time until all are incorporated. Stop mixer and scrap down the sides of the bowl and beat until combined. (6) Transfer 1/3 of the batter to a bowl. Leave remaining 2/3 in the mixing bowl. (7) In a small bowl mix hot water with cocoa and fold into the 1/3 batter. Set aside. (8) To the batter left in the mixing bowl, add orange zest, almond extract and orange juice. Mix well. (9) Use ice cream scoops to alternate dropping the chocolate batter and orange batter into the bundt pan. Use a wooden skewer or butter knife to swirl thru the two batters in the pan to make a marble look. (10) Bake 50 to 60 minutes until a toothpick inserted into the middle comes out crumbly but not wet. Remove and let cool 15 to 20 minutes. Turn out onto a cake plate and let cool completely. Note: You can simply dust with powdered sugar and enjoy or make the Orange Glaze and Chocolate Ganache I made in the video. ORANGE GLAZE: 1 cup Confectioner's Sugar (powdered sugar) 2 to 3 Tablespoons Fresh Squeezed Orange Juice 1 to 2 Teaspoons Orange Zest Mix together and drizzle over cake. CHOCOLATE GANACHE: 8-ounces (1 cup) Semi-Sweet Chocolate Chips 8-ounces (1 cup) Heavy Whipping Cream heated really not but not boiling. Heat the heavy cream and pour over the chocolate. Let sit for 5 minutes then whisk until melted and creamy chocolate.
