Press them through a fine mesh sieve and let cool completely before using. Metric Version 1/2 kg strawberries, fresh or frozen, make puree 1kg powdered sugar, sift if needed 50grams meringue powder 165 ml cooled strawberry puree, plus additional puree that you made from 1/2kg strawberries 10ml (1tbl) Vanilla Extract Cup Version 2lb (7-8 cups) powdered sugar, sift the sugar if needed 4 1/2 tbl meringue powder, I use Wilton brand 1/2 cup +2tbl cooled strawberry puree, plus additional puree that you made from 1/2kg strawberries 1tbl Vanilla Extract Make sure all your tools are grease free! I wipe my tools with a piece of paper towel and vinegar. Wipe dry with a clean towel. Sift the powdered sugar if needed, if powdered sugar has big chunks make sure you sift it, otherwise I don't sift. Mix using a whisk meringue powder with strawberry puree, until slightly foamy, add all the powdered sugar at once. Using your stand mixer, on the lowest setting, using paddle attachment, mix for about 3-4minutes, add vanilla extract, continue mixing for another 5-6 minutes. Scrape the bowl once and beat again. At this point icing will be very stiff. As I mentioned in the video, I wanted more strawberry flavor so I added additional strawberry puree that I made from 1/2kg (1lb)strawberries. Adding more puree thinned down the icing a little bit, to about medium stiff. When ready to decorate cookies I thinned it down with water to achieve desired consistency. I didn't add any additional colorings. Store in the airtight container, in the fridge. If stored for several days, stir, remix icing before using
