Hokkien/Teochew style Chinese braised duck (Lor Ark) 滷鸭. This Chinese dish is a great Singaporean favourite as it makes the duck meat extremely tender and fragrant. Braised in a delicious sauce full of the traditional spices of cinnamon, cloves, and star anise, you can hardly go wrong with this recipe. Add some Tau Kwa and hard boiled eggs to braise and serve on the side for a complete plate of Chinese Braised Duck. Servings: 4-6, Preparation time: 20 minutes Ingredients: • 3 tbsp Knife Premium Cooking Oil • 1 cup Knife Light Soya Sauce • 100 gm Blue ginger, peeled and sliced thickly • 50 gm Ginger, peeled and sliced thinly • 10 cloves Garlic • 4 Cinnamon sticks • 8 Cloves • 3 Star anise • 5 ltr Water • 1 cup Dark soya sauce • 2 tbsp Five-spice powder • 1 tsp Ground white pepper • 1 tbsp Chinese cooking wine • 2 sticks Sugar cane, cut into 4 inch long • Duck, 2 to 2.5kg, head and feet discarded • 5 Hard-boiled eggs, peeled • 2 pcs Tau kwa Cooking steps: 1. Heat Knife Premium Cooking Oil in a large wok on high heat. Add blue ginger, ginger, garlic, cinnamon sticks, cloves and star anise. Fry these ingredients for a short while till fragrant. 2. Add water, dark soya sauce, light soya sauce, five-spice powder, white pepper, Chinese cooking wine and sugar cane. Stir to boil for a few more minutes. Carefully lower the duck into the liquid. Lower the heat to medium, flip the duck every 15 to 20 min. so that each side has a chance to be submerged in the braising liquid. This is to ensure that the duck will be evenly coloured at the end of the cooking process. 3. Simmer over a medium fire for 1.5 hours. When duck is cooked, add in the hard-boiled eggs and tau kwa, let it simmer for another 15 mins. 4. Remove duck from wok.
