Ingredients: 1 bowl of rice flour 2 and 1/2 bowls of water (same bowl as used for rice flour measurements) 2 tablespoons of cumin seeds 7 to 8 fresh green chillies 3 teaspoons of salt (this can be as per your taste) 1 teaspoon of soda bicarbonate 2 tablespoons of sunflower oil Method: Grind the green chillies and the cumin seeds together into a paste. Pour the water in to a cooking pot on high heat. Add your green chilli and cumin paste, salt, soda bicarbonate and sunflower oil. Let it boil for at least 5 minutes before adding the rice flour and stir vigorously using a whisk (or a belan if you wish!) so that no lumps remain as shown on the video. Cook on low heat for another 2-3 minutes or until the mixture starts to thicken (stir in between if necessary). When the khichu is ready, the texture becomes consistent and stops sticking to the side of the pot. Take some sunflower oil in the palm of your hands and roll the khichu mixture into round portions with a little dimple in the middle. Best served with sunflower oil and achar masala.
