Welcome to Tasty Recipe . A perfect destination for kitchen recipes from all around the world . Espasol is a cylinder-shaped rice cake originating from Laguna ( a province in Philippines ). It is made from rice flour cooked in coconut milk and sweetened coconut strips, dusted with toasted rice flour. Ingredients we need for Espasol are : 3 cups glutinous rice flour (toasted) 400 ml coconut milk 1 cup evaporated milk 1 & 1/4 cup brown sugar 300 grams sweetened jack fruit 1/8 cup or 1/4 cup water (if needed) How to make Espasol : Toast the 3 cups glutinous rice flour until light brown in color. Set aside. In a separate pan, sweetened the jack fruit. Set aside. In a wok, combine coconut milk, evaporated milk and sugar. Bring to boil. Continue stirring in medium heat for 5 minutes. Put the sweetened jack fruit and continues to boil for another 5 minutes in low heat. Add glutinous rice flour and stir continuously. Don't forget to separate 1/2 cup for dusting. Cook until the mixture becomes thick and quite dry. Set aside. (about 30 minutes) Note: If the mixtures gets dry immediately after combining the glutinous rice flour, you can add 1/8 cup or 1/4 cup water. Transfer the mixture into a board or flat plate dusted with remaining toasted glutinous rice flour. Divide the mixture into parts or sizes according to your preference.
