Ingredients (Diana) 1. Yam cut slices 2. Ginkgo nuts (remove the bitter core) 3. Red dates (cut into 4 and remove the seed) Shallots oil 1. Shallots cut slices (can also use pork lard) 2. Fry till golden brown 3. Drain to get the oil Method 1. Steam the yam for 15-20min 2. Add 5 tbsp of sugar into the ginkgo nuts and steam 3. Add some water and 1 tbsp of sugar to the red dates and steam 4. Once the yam is cooked, press it to evenly smooth and place in on the sauce pan then on the low heat. Add shallots oil 1 tbsp at a time and continue to press the yam. Then add 3 tbsp of sugar and continue to press. Slowly add oil and red date liquid till the paste is fine and smooth. Usually takes about 25~30min. 5. Place the cling wrap on a bowl and add a little oil to evenly spread it so that the yam paste don’t stick to the bowl. 6. Add the yam paste into the bowl. If want to eat it hot, cover it and steam for 5min 7. Flip the bowl and place the yam paste on a plate. Arrange ginkgo nuts and red dates on the yam paste. Add a little liquid from the ginkgo nuts on the yam paste. 8.
