Separate the eggs. Beat the egg yolks and add to flour mixture. Add buttermilk and oil and stir. Do not overmix (there should be some lumps in the batter). Whip the egg whites with cream of tartar until soft peaks form. Gently fold in egg whites into the batter. Cook on hot Belgian waffle iron, sprayed with Pam Spray. Serve 8.
