Wood Staves / Oak Chips and other methods make it easy to add wood influence to your spirits and age them at home, saving your money. Some spirits are going to age better than others, higher proof spirits age quickly but alcohol takes on aging without too much work and you can take an unaged (or lightly aged) product and give it years of flavor in under a month.
