What is Pindi chole? Pindi chole, also known as Amritsari pindi cholle, is a classic Punjabi dish. It originates from the city of Lahore in Pakistan, and its popularity has spread around the world. Traditionally, it’s made with chickpeas, tomatoes and onions cooked in a spicy masala that’s often served over hot naan bread. The key to making delicious pindi chole is in the masala. It typically contains a blend of spices including coriander, cumin, garam masala, red chilli powder and turmeric. Sometimes other ingredients such as garlic or ginger paste may also be added. The spice mix is then cooked in oil until the flavors are released, and finally added to the cooked chickpeas, tomatoes and onions. For best results, it’s important that you allow the pindi chole to simmer for several minutes, so that all of the flavors can blend together properly. Serve with hot naan bread and a side of onions and lemon wedges for an amazing flavor experience. Enjoy! Ingredients Vegetable oil: 2 tbsp Cumin seeds: 1 tsp Cloves: 5-6 Cinnamon stick: 1 Bay leaf: 1 Black peppercorns: 8-10 Green chillies: 2 Hing: ¼ tsp Onion and garlic paste: ¾ cup Tomato paste: ½ cup Salt: to taste Turmeric powder: ½ tsp Red chilli powder: ½ tsp Coriander powder: 1 tsp pomegranate seeds: ½ tsp Boiled kabuli chana: 2 cups Kasuri methi: 1 tbsp Chopped coriander: handful Instructions In a stainless steel frypan, add some vegetable oil and whole spices, fry them lightly and add green chillies to it, with some green chillies and onion garlic paste. Saute this thoroughly. Add some tomato paste to the and mix that together as well. To this mixture add the dry spice powders, with some chana masala. Mix everything together and add the boiled chana with the chana water into it. Partially mash the chana inside the fry pan. Reduce the water till you get the desired consistency.
