I am going to give you be best hack to make the perfect homemade strawberry sheet cake. I love this cake when strawberries are in season or I can get great frozen berries! It's so good!!! Ingredients 2 3/4 cup (330 gms) all purpose flour 1/2 tsp salt 1/2 tsp baking soda 2 tsp baking powder 1 packet strawberry gelatin ( 3 oz) 3/4 cup neutral flavored oil ( canola, avocado, sunflower) 4 large eggs or 5 medium eggs 1/2 cup strawberry juices ( add milk until you get 1/2 cup if the liquid isnt enough) 1/2 cup heavy cream 3/4 cup strawberries ( make sure this is with the juices mostly removed! you do not want the cake to be too wet) 2 tsp vanilla extract Note: could also use a tsp strawberry extract. I don't tend to have that at home so I don't use it. Icing 3 1/2 cup powdered sugar 1 stick unsalted butter ( can used salted, just dont add extra salt) large pinch salt (~1/8 tsp) 6-8 oz cream cheese 1 tsp of the strawberry gelatin 3 tbsp strawberries (crushed, make sure it doesnt have too much liquid) ~1/4 fresh cut strawberries (leave it chucks, you want the pieces visible in the frosting) optional, can leave out if fresh is not in season 1 tsp vanilla extract Bake until the toothpick comes out clean! No matter the cook time I say in the video, if your toothpick does not come out clean it is not ready! Some ovens run a bit hot or cold, so be mindful! It is normal for the cake to take 40-45min!
