What's up y'all!? Welcome back to another episode of Smell What Coop is Cooking!! On this episode I'm making a weeknight go to pasta dish, Carbonara!! 🍝🧀🥓🥚 I like making this when I'm busy and short on time but still want something fire at the crib. Very few ingredients needed, so chances are you got most of this stuff laying around the kitchen at your spot too!! This one will be sure to become a fan favorite around your household so try this recipe out y'all!! Tune in, don't miss out, don't get shut out!! Be easy yall!! 💯 - Coop Carbonara Ingredients 1 tbsp Ground Black Pepper ½ cup of Italian Flat Leaf Parsley 1LB Spaghetti noodles 1-1½ cups Parmesan Cheese 4 oz Pancetta or Bacon Diced 2 eggs Beaten Step 1: Mise En Place - Chop a hand full of parsley and grind black pepper into a small dish. Set aside until the end. - Grate 1 - 1½ cups of Parmesan cheese into a bowl. - Crack 2 eggs into a separate mixing bowl. - Add Parmesan Cheese into mixing bowl with eggs and beat to combined. - In a separate dish add Pancetta and set aside. If you don't have Pancetta, you can substitute it for bacon. Just dice about 6 - 8 slices of bacon and set aside. Step 2: Cooking the Pancetta - Fill a large pot and bring it to boil. This will be for your pasta. - While pasta water bowls, on a separate burner get a large pan out. Add your Pancetta or bacon into the COLD PAN. (Adding into a cold pan will allow you to render out the fat from the pork. You need this!!) - Cook Pancetta until it becomes crispy, and the fat has rendered out. (If the pancetta finishes before your spaghetti noodles, just remove the pan from heat and bring back to temp once pasta noodles are ready.) Step 3: Cooking Spaghetti - Once water comes to a boil, add spaghetti noodles and cook until al dente or as the package directs. Step 4: Making Carbonara - When pasta is finished, add spaghetti directly to pan of Pancetta. Mix around a bit to coat fat on pasta. - Next add beaten egg and cheese mixture into pan and gently mix all round to bring together a creamy pan sauce. Don't scramble. Gently mix and fold around to coat this creamy sauce all over your pasta. If the moisture starts to evaporate, just add more starchy pasta water from pot straight into the pan of Carbonara and continue to mix. Step 5: Plating - In a bowl or on a plate serve a generous helping of Carbonara. Add black pepper and chopped Parsley to taste and enjoy!!
