It is also extremely popular during Ramadan. Msemen is traditionally spread with butter, honey, jam, or cheese, though some Moroccans prefer to dip it in a sweet syrup made from melted butter and honey. Its crunchy exterior and soft inside provide a one-of-a-kind texture that can only be found in this Moroccan treat, made from durum wheat based dough that has been carefully folded and rolled to paper thin perfection. Making Msemen may seem like a difficult challenge at first, but it is actually quite simple with the help of our expert Dada who will give you all the tools you need to make a delicious Msemen, including step-by-step instructions and pro tips. Msemen is incredibly convenient, as you can make a large batch at once and store it in the fridge or the freezer.You'll be surprised how quickly this flavorful Moroccan bread becomes a regular in your kitchen! Ingredients: For the dough 150g (3/4 cup) durum wheat flour 300g (2.5 cups) all-purpose flour 1 teaspoon granulated white sugar 1 teaspoon salt 350ml (1 1/2 cup) lukewarm water Vegetable oil for brushing the dough For the shaping the msemen 100g (7 tablespoons) butter, at room temperature 4 tablespoons vegetable oil 6 tablespoons durum wheat flour 1 teaspoon baking powder For serving (optional) Honey Steps: Step 1: Preparing the dough 1- Place the durum wheat flour, all-purpose flour, salt, and sugar in a large bowl, and mix to combine. 2- Gradually add the lukewarm water, and combine by hands until a dough is formed. Note: Add more water or all-purpose flour as needed. 3- Knead the dough for 5 to 7 minutes or until the dough becomes elastic and not sticky. Note: You can alternatively use a bread machine with a dough hook instead of kneading the dough by hand. 4- Coat the dough with vegetable oil. Cover with plastic wrap, then set it aside to rest for a minimum of 10 minutes (up to 30 minutes). 5- Dip your hands in oil, then divide the dough into balls weighing around 60g (2.1 oz) 6- Place the dough balls in a tray, and brush them with more vegetable oil. 7- Cover with plastic wrap and set aside to rest for 10 minutes. Step 2: Preparing the mixture for shaping the dough 1- Place the butter and durum wheat flour in a bowl. 2- Mix by hand until you have a paste-like texture. 3- Add the oil and baking powder, then mix to combine. Set aside. Step 3: Shaping the Msemen 1- Oil your work surface (you can use a large plate or the counter). 2- Place on dough ball at a time on the oiled surface, then flatten it into a very thin, see through circle. Flip the dough occasionally to help you spread it well. 3- Add 1/2 tablespoon of the butter mixture in the middle, and spread it all over the circle of dough. 4- Take each side of the dough and bring it into the center to form a long rectangle. Note: Do not worry if you rip the dough as you fold it, it will not impact the final result. 5- Fold one end of the long rectangle of dough toward the center, then fold the opposite end of dough to the center, to create a square. 6- Set the folded dough aside on an oiled tray. 7- Repeat the process until all of the dough balls have been folded into squares. Cover with plastic wrap and let the squares rest for 10 minutes. Step 4: Cooking the Msemen 1- Heat up a pan or griddle over medium heat. 2- Place one square of dough at a time back on the oiled work surface, flatten it with your fingers to create a rectangle that is approximately 0.5cm (1/4 in) thick. 3- Sprinkle the pan with vegetable oil once it’s hot, then place msemen in the pan. Note: The dough will slightly lose its shape as it's moved to the pan, you can reshape it once it's in the pan before it starts to cook. 4- Cook the msemen on one side until it starts to hold its shape (about a minute), then turn it to cook the other side. 5- Continue flipping every 30 seconds until both sides are fully cooked through and golden brown. Note: Make sure to occasionally push down on the edges of the msemen to make sure the edges are cooked through. 6- Set the cookes msemen aside, then repeat until you have cooked all the remaining dough.
