It's sooo good~ OYAKODON (親子丼) Recipe Ingredients: 2 Lbs Chicken Thighs ( Boneless,Skinless, Chopped 1.5 inch) 1 Onion 1 Bunch Chopped Parsley (To taste)Kombu Instant Dash Stock granules (can use any dashi stock link to the one I used: https://amzn.to/3dXrouF) 300 mL water 1 1/2 Tbsp Rice Vinegar (Or Mirin) 1 1/2 Tbsp Light Soy Sauce (Low Sodium) 1 1/2 Tsp White Sugar 2 Eggs (lightly neatened) Rice, Cooked (I used instant rice) Directions: 1. Prep ingredients, remove skin from chicken thighs, chop into 1.5 inches. Peel and chop 1 onion, chop a bunch of parsley. 2. Make dashi stock with instant dashi granules added to 300 ml water, stir. 3. Add into the stock, 1 1/2 tbsp rice vinegar, 1 1/2 tbsp light soy sauce, 1 1/2 tsp sugar, stir. 4. On a pan, medium heat. cook 2 lbs chopped chicken until its done or reaches minimum temp of 165F 5. Add one chopped onion, cook 6. Add the sauce, let it boil. Cover lower heat, cook 5 minutes 7. Slowly drizzle 2 whisked egg. Cover, cooked until desired doneness. Garnish with parsley. Serve over rice. Add me, and send me food pics!
