Ingredients 1 1/2 lbs 80/20 ground beef divided into 8 even balls. salt and pepper to taste oil 8 slices of American or Cheddar cheese Lettuce Sliced tomato 2 onions sliced 4 burger buns 2 Tbsp butter 3 cloves garlic 2/3 cup mayo 1/4 cup ketchup 3 Tbsp mustard 1/4 cup chopped pickles In a pot, over medium heat, add butter. Once melted and hot, add sliced onions. Season with salt and a pinch of sugar. Cook for 20-30 on medium low heat, stirring occasionally until deeply caramelized. Then add garlic and cook for 1 more minute. Keep warm. In a small bowl, add mayo, mustard, ketchup, pickles, salt and pepper. Mix well until combined. Set aside. In a griddle pan, over medium heat, add butter. Once melted and bubbly, toast your buns until golden on cut sides. In a cast iron skillet, over medium high heat, once very hot and smoking, spray with oil. Then add two balls of meat and squash with a spatula until 1/3 inch thick. Season with S&P and let cook for 1 minute. Then flip, season again, add a slice of cheese and cover with a lid. Once cheese is melted, remove from pan. To assemble, add sauce to both buns. To the bottom bun add tomato, lettuce and two burger patties. Add your top bun and enjoy!
