SERVINGS: 2 INGREDIENTS: Dashi • 4 cups water • 3 cups bonito flakes • 2 4-inch pieces of kombu Oyakodon • 1 lbs. chicken thigh (cut into bite-sized pieces) • 1/2 onion (sliced) • 1 scallion (sliced) • 2 eggs • 1/3 cup dashi • 1/5 tbsp. soy sauce • 2 tbsp. Mizkan® Mirin Sweet Cooking Seasoning • 1 tbsp. sugar • 2 cups cooked short-grain rice • Thinly sliced nori (garnish) DIRECTIONS: Dashi 1. In a pot, soak kombu in water for 30 minutes. 2. Heat the pot and, right before it comes to a simmer, turn it to low. 3. Add bonito flakes and let it sit for 15 minutes. 4. Strain the dashi and save it for later.   Oyakodon 1. In a small pan, heat dashi, soy sauce, Mizkan Mirin Sweet Cooking Seasoning and sugar until the sugar is dissolved. 2. Add the sliced onions and chicken thigh and cook on medium heat until the chicken is cooked through (6-8 minutes). 3. Once the chicken is cooked, add scallion. 3. In a separate bowl, lightly beat two eggs. 4. Pour the eggs over everything in the pan and cover with a lid. 5. Once the eggs are set, pour the contents over a bed of rice.
