Even though Amaranth is categorised as a small grain, it is in actual fact a seed, which means that it is gluten-free and incredibly nutritious. It also shares the same family with another very well known small grain (seed) called quinoa. The differences between the two are very subtle, but it is important that you know these difference so that you can choose the crops that is best suited to your specific needs. Amaranth needs the warm summer months to grow. This annual is best planted out in early Spring and provides an abundance of gorgeous flowers throughout the summer months. As soon as the flowers have gone to seed the plant is ready for harvest. Before the end of season seed harvest Amaranth leaves can be enjoyed as a very nutritious leaf green, also commonly referred to as Marog, which is eaten in very much the same way as spinach is. The stems are edible and provide a yummy crunch when steamed.
