Shahi Tukray Roll ups Serves 7-8 Recipe in English: Ingredients: -Doodh (Milk) 1 litre -Cheeni (Sugar) 4-5 tbs or to taste -Elaichi powder (Cardamom powder) ½ tsp -Makhan (Butter) 2 tbs -Cream 4 tbs or to taste -Dry milk powder 1 & ½ Cups -Bareek cheeni (Caster sugar) 4 tbs or to taste -Pista (Pistachio) ground 1/4 Cup -Green food color 1-2 drops (optional) -Bread slices 12-14 -Cooking oil for frying -Pista (Pistachio) Directions: -In pot,add milk and bring it to boil,add sugar,cardamom powder,mix continuously and cook on medium low flame until milk is reduce to half while stirring in between. -In frying pan,add butter and let it melt,add cream and mix well. -Add dry milk powder,mix well and cook for 2-3 minutes. -Add caster sugar,grinded pistachio,mix well and cook until it leaves the sides of the pot (approx. 5 minutes). -Add green food color and mix well & let it cool down. -Cut corners of the bread slices and roll out with the help of the rolling pin. -Take prepared filling,make a ball and place at the corner of the bread slice and roll up (makes 12-14). -In frying pan,heat cooking oil and fry roll ups until golden brown. -In serving dish,place bread roll ups,pour warm prepared milk. -Garnish with pistachio & serve! Recipe in Urdu: Ajza: -Doodh (Milk) 1 litre -Cheeni (Sugar) 4-5 tbs or to taste -Elaichi powder (Cardamom powder) ½ tsp -Makhan (Butter) 2 tbs -Cream 4 tbs or to taste -Dry milk powder 1 & ½ Cups -Bareek cheeni (Caster sugar) 4 tbs or to taste -Pista (Pistachio) ground 1/4 Cup -Green food color 1-2 drops (optional) -Bread slices 12-14 -Cooking oil for frying -Pista (Pistachio) Directions: -Pot mein doodh dal ker ubal lein,cheeni aur elaichi powder dal ker ache tarhan mix karein aur darmiyani halki ancch per doodh adha reh janay tak paka lein aur musalsal mix kertay rahein. -Frying pan mein makhan dal ker melt ker lein,cream shamil karein aur ache tarhan mix ker lein. -Dry milk powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein. -Bareek cheeni aur grinded pista dal ker ache tarhan mix karein aur pot ki sides chornay tak paka lein (approx. 5 minutes). -Green food color dal ker ache tarhan mix karein & thanda ker lein. -Bread slices ka corners cut ker lein aur rolling pin ki madad sa bail lein. -Tayyar filling ko la ker ball bana lein aur bread slices ka corner per rakh ker roll ker lein (makes 12-14). -Frying pan mein cooking oil garam karein aur roll ups ko golden brown hunay tak fry ker lein. -Serving dish mein bread rolls ups rakh dein aur neem garam doodh dal dein. -Pistay sa garnish ker ka serve karein.
