This style of tacos is one of my favorites to do!! The beefy goodness that this dish offers is amazing!! I start out by seasoning this tongue up heavy with Meat Church fajita seasoning and then hit with Tailgators Party Rub. Set my grill to 250 degrees and let it get a smoke bath for about 2 hours (just looking for the rub to set). After about 2 hours I put it into a pan and add my favorite beer, cover with foil, put back onto the grill, and kick my temps up to 300 degrees so we get a nice braise on the meat. I cook until the internal temps are about 210 degrees (you want this thing to be super tender since we are pulling it for tacos) This normally takes about another 2-3 hours. Once it is super tender then pull off the smoker and let it rest about 30 minutes. The Total cook time is about 5-6 Hours, but totally worth it!! Now the fun part!! Pulling the meat and building your delicious tacos!! For the taco build: I like to use street size tortillas, but you can use what ever you like.
